What Types Of Processed Fruits And Vegetables
Canning Process
A common canning process for fruits is canning fruit in syrup. This is a canned product made from edible parts of fruits soaked in syrup at different concentrations, with or without the addition of food-grade acid. The product retains a flavor profile similar to that of fresh fruit, while also having a relatively long shelf life, ranging from 1 to 2 years.
In addition to pineapple and lychee, which are two commonly used ingredients for making canned fruit soaked in syrup, this product can also be made from various other fruits such as longan, rambutan, banana, mango, peach,…

Freezing Process
Freezing is a simple, quick way to preserve foods. Fruits freeze well and retain their distinct fruit flavor. Currently, the IQF (Individual Quick Freezing) technology is increasingly being applied in the food processing industry, especially in fruit production.
IQF, short for Individual Quick Freezing, is a super-fast freezing technology used for individual products. In the IQF process, the temperature exposure to the fruit gradually decreases from -35°C to -43°C.
The IQF technology is capable of rapidly freezing products within a timeframe of 70 to 100 seconds, minimizing the formation of large ice crystals in the food. This not only preserves the natural structure of the fruit but also maintains its fresh flavor and nutritional value.

Drying Process
Dried fruits have had almost all of their water content removed through drying methods. The fruit shrinks during the drying process, leaving behind a small, energy-dense fruit. The simplest drying method is sun-drying. Additionally, fruits and vegetables can be actively dried using equipment such as drying cabinets, manual drying ovens, or machines with heating elements and fans.
Other drying methods include freeze-drying (sublimation), which involves freezing the fruit at -20°C, and infrared drying, which uses infrared radiation beams.
